Coq Au Vin

Coq au Vin is a beloved French dish that translates to “rooster in wine.” Traditionally made by slow-braising chicken in red wine with mushrooms, onions, and herbs, it’s rustic, rich, and deeply comforting. The wine tenderizes the meat and creates a deeply flavorful sauce that feels both homey and indulgent.

This hearty dish is traditionally served during Nouveau Festival in France, and Chef Javier Santos is preparing to bring his own spin to this heartwarming dish.

A Nod to Tradition: Melty Cheese & Wine

In the spirit of French Beaujolais celebrations, Newveau brings you a warm, melty cheese experience inspired by the cozy Alpine dishes often served with young red wines. Our friends at Good Company Cheese will be serving boiled potatoes with optional ham topped with rich, gooey cheese—a simple, comforting bite that pairs beautifully with a glass of nouveau-style wine.
